Not a big fan of this one. It just didn't have a lot of flavor, or at least mixed up it didn't taste like much. I didn't finish it. Good all around nutrition, but probably not worth the prep time.

This was a good soup. Pretty simply to make. I had enough for the next day as well. Adding some ham to this might have added a nice twist as well. Don't add too much mint though.

Really good. I wish it was a little sweeter, so I'd probably add more apple next time. And, MAYBE a little more curry for some more flavorish spice!

Sweet Potato and Red Pepper Soup

2 Red Bell Peppers
4 Cups Sweet Potatoes
1 Onion
2 Garlic Cloves
1.25 Quarts of Vegetable Stock
1.25 Quarts of White Wine

Sorry, no pics of this one. It looks just like the curried carrot and apple soup though. If you like sweet potatoes, go for it. I didn't have any of the white wine on hand, so I just doubled up the vegetable stock. I was probably missing out on some flavor there, so try to leave that in.

First off, the "small" portion was HUGE! That didn't help with the psychological thing. It was tough to think that all that greyish stuff was going to live in my stomach. So, I had some of it and too the rest home. Needless to say, I didn't reopen the container.
